著名白酒专家。教授级高级工程师,硕士生导师,国家级高级考评员,科技部科技特派员,国家及省级项目评审专家;《食品科学》《食品工业科技》特约审稿专家;中国酒业大师,四川大学客座教授。

( 三 ) 形成酱香风格的关键工艺
1、高温制曲
高温制曲为生成酱香物质提供了基础, 生产酱香型酒, 曲药质量对形成酒的风格和提高酒质起着决定性的作用。 对酱香型酒来说, “好曲产好酒” 与浓香型酒 “百年老窖产好酒” 是一个道理。 酱香制曲中必须把握好高温、 多水、 微氧或缺氧这三个条件, 才能做出优质的高温大曲, 为生产优质大曲酱香酒打好基础。
(1) 高温是关键 郎酒的崔利等研究认为, 高温加速了化学、 生物化学、 褐变反应的发生与进行, 生成了众多的加热香气成分。 众所周知, 温度是化学反应的重要条件,无论是化学的反应还是生物化学的反应。 在高温制曲中的反应很多是酶促反应, 但每种酶都有其反应的最适温度, 在最适温度以下, 温度每升高 10℃ , 反应速度也相应增加 1 ~2 倍。 由此看出, 没有达到一定的温度条件, 反应缓慢, 不彻底, 就得不到我们需要的在高温下反应生成的香味物质。 在高温条件下有哪些反应呢?
① 蛋白质的热分解;
② 氨基酸加热分解;
③ 糖与蛋白质的反应;
④ 糖与氨基酸的反应;
⑤ 糖与氨的反应;
⑥ 糖的裂解生成物与氨基酸的反应;
⑦ 微生物的代谢反应。
重要的还有在高温下发生的褐变反应 (美拉德反应、 斯特勒克反应、 焦糖化反应及酶促褐变反应)。
从表 7-49、 表 7-50 可以看出, 大曲中香味成分有不少也出现在酒中, 比如四甲基吡嗪、 三甲基吡嗪、 2-甲基吡嗪、 2-乙基-3, 5-二甲基吡嗪、 2, 5-二甲基吡嗪、 2, 6-二乙基吡嗪、 吡啶、 糠醛等。 但各香型白酒中的香味成分无论在种类上还是在含量上差异都很大, 酱香型酒显著高于别的香型的酒, 这不能不说与高温制曲及其酿酒工艺有关。
