1、高温制曲
高温制曲为生成酱香物质提供了基础， 生产酱香型酒， 曲药质量对形成酒的风格和提高酒质起着决定性的作用。 对酱香型酒来说， “好曲产好酒” 与浓香型酒 “百年老窖产好酒” 是一个道理。 酱香制曲中必须把握好高温、 多水、 微氧或缺氧这三个条件， 才能做出优质的高温大曲， 为生产优质大曲酱香酒打好基础。
（１） 高温是关键 郎酒的崔利等研究认为， 高温加速了化学、 生物化学、 褐变反应的发生与进行， 生成了众多的加热香气成分。 众所周知， 温度是化学反应的重要条件，无论是化学的反应还是生物化学的反应。 在高温制曲中的反应很多是酶促反应， 但每种酶都有其反应的最适温度， 在最适温度以下， 温度每升高 １０℃ ， 反应速度也相应增加 １ ～２ 倍。 由此看出， 没有达到一定的温度条件， 反应缓慢， 不彻底， 就得不到我们需要的在高温下反应生成的香味物质。 在高温条件下有哪些反应呢？
① 蛋白质的热分解；
② 氨基酸加热分解；
③ 糖与蛋白质的反应；
④ 糖与氨基酸的反应；
⑤ 糖与氨的反应；
⑥ 糖的裂解生成物与氨基酸的反应；
⑦ 微生物的代谢反应。
重要的还有在高温下发生的褐变反应 （美拉德反应、 斯特勒克反应、 焦糖化反应及酶促褐变反应）。
从表 ７－４９、 表 ７－５０ 可以看出， 大曲中香味成分有不少也出现在酒中， 比如四甲基吡嗪、 三甲基吡嗪、 ２－甲基吡嗪、 ２－乙基－３， ５－二甲基吡嗪、 ２， ５－二甲基吡嗪、 ２， ６－二乙基吡嗪、 吡啶、 糠醛等。 但各香型白酒中的香味成分无论在种类上还是在含量上差异都很大， 酱香型酒显著高于别的香型的酒， 这不能不说与高温制曲及其酿酒工艺有关。
