秋季和果子——秋之叶

淡紫色练切……30克

红豆沙馅……15克

白色练切……3克

淡紫色练切……适量(花蕊使用)

 

  1. 将淡紫色练切搓圆压扁,表面放上搓圆的红豆沙馅,按压红豆沙并旋转整体,慢慢收口练切包住红豆沙,搓圆接口朝下。
  2. 将白色练切搓圆,按压在紫色面团表面, 将接口捏至融合为一体,整体搓圆润。
  3. 将整体稍微压扁,将双手“V”字形打开,来回搓动成圆润的锥形。
  4. 使用三角棒在表面标记一个中心点,再围绕整体侧面压出五道均等的切痕。
  5. 将潮湿的绢布铺在练切表面,将绢布撑开,使用竹签在标记的中心点按压出凹槽。
  6. 将每个均等的面使用食指向外推压做出花瓣。
  7. 再将花瓣外侧捏出尖角。
  8. 将淡紫色练切在网筛上压出花丝,使用竹签取少量放在练切凹槽处即可。

 

小贴士

在操作过程中练切易变干,不用的练切使用保鲜膜包裹住,防止水分流失。
