然而遗憾的是，这些雕刻物多数情况下只起到了装饰和点缀的作用，人们似乎更重视雕刻物的视觉效果。对此，日本料理界的领军人物大田忠道认为，料理中的装饰本就是料理的一部分，也应该做得很美味，因此他创造了一个新的概念，称这些雕刻物为“食彩加工”。为此，在大田忠道的监修下，我们创作了这本有关食材雕刻的书。其中的“加工”不仅仅用于观赏，更是可以品尝的。

用一整根白萝卜制作的、没有切口的锁链形雕刻物。孔洞处用肉末山芋填满，尽显魅力。制作过程十分简单，但要做出均匀的链条有一定难度，考验雕刻者对食材整体的把控。
1、用菜刀竖着刮掉白萝卜的皮，做成精美的长方体。要点是让4个面的宽度几乎相等。切掉前端很细的部分。
2、在白萝卜一面上划两条竖线，将其分为三等份。深度控制在整体粗细的1/3左右。切得太深会无法继续雕刻，所以可以先划出浅痕，然后慢慢调整深度。
3、用同样的方法在4个面上都划出痕迹，然后去除多余的部分，这时白萝卜的横截面呈十字形。
4、调整切痕过深的部分，让十字形的每个面宽度相等。当所有切痕的深度控制在萝卜粗细的1/3时，每个面的宽度基本相等。
5、用木工刀将白萝卜头部多余的部分切除，留下蒂。
6、用尺子测量突出的部分，用木工刀从头部开始5cm处划出记号，然后再向前1cm，划出记号。
7、如此反复，将整根白萝卜都划上记号。反面同理。然后在左右两侧从根部开始2.5cm处划记号，接着按照5cm、1cm的间隔做记号。
8、用木工刀在做了记号的地方划出1cm宽的V字。
